I have heard of weird things happening with skin tones when shooting with the popular Panasonic GH5 when trying to push the flat picture profiles beyond what they are capable of in post-processing. Flat picture profiles are used are used to try and capture more dynamic range but they have some serious drawbacks/limitations. The camera Giorgio uses is a much more expensive professional camera though, which I thought wouldn't have had the same limitations, for instance, I think it can probably shoot raw uncompressed video which is preferable to shooting with a flat picture profile.
