Ultimately, it's all sex work. However, there is a difference between an escort/hooker/etc. and a performer. The latter is sex made for media/entertainment and escorting is typically a private (and usually confidential) job. Of course, they may overlap as well. You also need to realize it takes quite the motivation (for the most part) to even get naked/fuck for money.

Your statement is a bit disingenuous. I do agree with you that it is naive for consumers/fans to believe that all performers are also escorts and they can be had for a price. That type of thinking is unhealthy and stereotypes adult performers. However, let us not kid ourselves that being a performer can actually be a gateway to escort work. You can also flip it around and say that some escorts use a few scenes to make a bigger market for themselves.
The act of high class escorting (which includes some of the famous performers you may know) for the most part is usually under the radar (UTR) and completely discrete. That means you either need the connections (with your background vetted) or just happen to accidentally stumble upon it while networking in some way. Aside from the legality of it varying from country to country, the reason is primarily for privacy/reputation, safety (stalking, getting non-stop annoyed from fans/random people), and from other people/groups sex shaming them. Let's also not forget the people who don't perform for the media, but moonlight as an escort.
The performers to escort ratio isn't 1:1, but it is more common than you think. I might sound like an asshole for this, but Twitter is the worst place for this information (especially if you are bragging about talking to many of them on Twitter or any other platform). Chances are slim that most folks will be able to interact with any of those performers intimately for indepth details like that over the internet. In most cases, Twitter is just a platform for them to advertise their public work and give their fans a place to interact with them. It also includes baiting them for gifts/wishlists.

The world drastically changes when you go from the internet to the real world. Of course, this is not to say that the performers who say they don't escort are lying either. Their word should be believed, unless you see conflicting data to prove otherwise. Porn is already a grey area as it is, so you can imagine how escorting is.
There are also websites and dedicated private forums dedicated to reviewing and sharing details of individual/personal experiences.
